Vegetable Pulav Recipe | Easy Indian Rice Dish | Homemade Veg Pulao

Vegetable Pulav is the perfect one-pot meal — fragrant rice cooked with vegetables and gentle spices. Light, tasty and comforting, it’s ideal for lunch, dinner or even tiffin.

Ingredients

  • 1 cup basmati rice

  • 2 tbsp oil or ghee

  • 1 bay leaf

  • 2–3 cloves

  • 1 small cinnamon stick

  • 1 onion, sliced

  • 1 cup mixed vegetables

  • 1 tsp ginger-garlic paste

  • 1–2 green chillies

  • Salt to taste

  • 2 cups water

  • Fresh coriander & lemon

Method

  1. Wash and soak rice for 20 minutes.

  2. Heat oil/ghee and add whole spices.

  3. Add onions and sauté till golden.

  4. Add ginger-garlic paste & chillies.

  5. Add vegetables and cook slightly.

  6. Add rice, salt and water.

  7. Cover and cook till fluffy.

  8. Garnish and serve warm.
